insatiable-geek: Super Mario Quesadillas! 8 oz. package shredded sharp Cheddar 16 small corn tortillas black beans Star-shaped cookie cutter Pre-heat the oven to 350 degrees.  Split your tortillas into 2 piles: half will be cut out with the cookie cutter.  Lay down the un-cut tortillas on 2 cookie sheets and cover with roughly a handful of cheese.  Cover with the star-cut tortillas and place in the oven.  These will only need to bake for about 5 minutes, just long enough to melt the cheese.   Once the quesadillas are ready, place 2 black beans on the star for eyes, and enjoy!
